Local, seasonal cuisine based on what is found locally. Whole animal butchery program at the butcher shop provides some of Colorado's best meat and charcuterie. Menu changes often reflecting the seasons. Butcher Shop & Market is open for breakfast, lunch, grab&go, as well as Boulder's best selection of fresh meats, sausages, smoked items, etc. Market also has a selection of local artisan items. Dinner restaurant is helmed by Top Chef Winner, Hosea Rosenberg, and serves up some of Boulder's (and Colorado's) best food.
