Chimayo Stone Fired Kitchen is a contemporary American bistro with featuring from-scratch Latin and Mediterranean inspired cuisine. Fresh salads, creative small plates, artisanal pizzas, and fire-roasted steaks, chicken and seafood are prepared in twin 600+ degree stone hearth ovens in an open kitchen. The Owners have restored the interior of the historic Century Building on Main Avenue, revealing turn-of-the century Carnegie steel support beams, the original maple hardwood floor and decorative tin ceiling tiles, and the original brick wall. These historical elements, along with the expo kitchen, rollup windows, and 35-foot curved bar, create an urban industrial loft setting for a unique Durango dining experience. Excellent food & service. Pleasantly surprised at quality of food, menu options and service. Durango has many great options for fine dining and Chimayo Stone Fired Kitchen is one of them.

Delicious take out order: Chimayo Salad with steak, and a wild mushroom pizza. Pizza was smaller than expected, but delicious! Host was super helpful in getting my order for me.

Great food. The pork chop, omg. But the restaurant has posted on their door that as of October 12, 2025, they will discontinue their lunch service. Dinner hours/menu will remain unchanged.
