Chicaoji Chipotle Chile Sauce

History

I created Chicaoji Chipotle Chile Sauce with the help of the community of friends and family who gather at the Vortex Juice Bar and Cafe on Lopez Island It started when a friend gave me a handfull of raw organic goji berries and cacao nibs together. This amazing flavor seemed to need just a little chile heat so I went over to Blossom Organic Grocery to buy one of every kind of chile they had on the shelf. I experimented with the ratios of various chilies, vinegars, salts, and sweeteners. I decided I only wanted to use the best ingredients. I brought my experiments to the Vortex for tasting and critique. In about 2 1/2 months I had the recipe to what became Chicaoji. The new sauce needed a new name so disassembled the names of the main ingredients: CHIpotle + caCAO + goJI became the word CHICAOJI At first, I was just trying to make a nice sauce to put on our meals at the Vortex but people kept asking for more and more. Now I have a small business that makes it available to you
